CHOCOLATE KOURABIEDES

I wanted to do something different and try something new for this year and so I made these Chocolate Kourabiedes from a recipe by Stelios Parliaros a very well-known Greek pastry chef.

They were pretty good, but of course they didn’t taste like kourabiedes. So, and since I crave them more often now that we approach Christmas, I think I will make the original ones and post about them too in a coming post.


Ingredients


  • 200 gr. butter

  • 80 gr. caster sugar

  • 100 gr. almonds, roasted and grated

  • 260 gr. flour

  • 20 gr. cocoa powder


Sauce For the Glaze

  • 200 gr. caster sugar

  • 2 tbsp milk

  • 1 tsp cocoa


Steps to Make It


  1. Preheat oven 175° C/345°F.

  2. Put all ingredients in the mixer bowl and mix until it becomes a smooth dough.

  3. Put the dough on a parchment paper and put it in the fridge to stabilize for half an hour.

  4. Take it out and roll it to a 1-1,5 cm thick layer.

  5. With Christmas molds make biscuits.

  6. Bake them for 12 to 15 minutes.

  7. Take them out of the oven and let them cool.


Sauce For the Glaze
  1. We mix the glaze ingredients until they become a thick batter.

  2. If the batter is too thick, pour ½ tsp of milk until it is thick but can be spread on top of the cookies.

  3. Brush the cookies.

  4. Let it stabilize and serve.
